Tony
Eldred is the founder of Eldred Hospitality Pty Ltd, a company that provides key
staff recruiting and training, together with management consulting services for
leading hospitality and tourism companies in Australia and New Zealand. The
company has been operating since 1987.
Eldred is a highly regarding expert in issues relating to hospitality
management. He regularly contributes articles to publications such as Restaurant
and Caterers magazine,
What’s Cooking?;
the Australian Institute of Management magazine,
The AIM Journal; and
Our Hotel, the Australian Hotels
Association magazine. Since 1987, his monthly management page in
FoodService magazine has been
regarded as a resource for information on trends and management techniques in
the hospitality sector.
Tony Eldred has over 40 years’ experience in the hospitality industry.
Immediately prior to founding his company, he studied Law at Melbourne
University, while also working for the Hilton Hotel Corporation where he held a
special management training position based out of Hilton’s Melbourne property.
Prior to working with Hilton, Tony worked for the international
confectionary and beverage giant, Cadbury Schweppes Ltd, who appointed him as
the Victorian Manager (1980 - 1983) for one of their key subsidiary companies,
Associated Home Deliveries Pty Ltd. As the State Manager, Tony was responsible
for 500 employees, 220 trucks and two key distribution depots. During his tenure
with AHD, Tony’s challenge was to completely restructure the company, develop
and implement a management control system, negotiate annual agreements and
liaise with trade unions such as the Transport Workers Union and the Storemen
and Packer’s Union.
Tony Eldred commenced his hospitality career in 1970 with the KFC
Australia Pty Ltd who, at that time, was establishing foothold in the Australian
fast food market. Tony's leadership and organisational skills lead the
organization to fast track him to into a senior management position. During his
10 year tenure with KFC he held a variety of management titles including Area
Training Manager and Area Sales/Operations Manager. Eldred also managed key
vendor relationships and was the KFC representative to the Retail Traders'
Association.
Eldred attended Caulfield Grammar School in Melbourne. He holds professional
accreditations with the Australian Institute of Hospitality Management (FAIHM)
and the Australian Institute of Management (AFAIM). He is an active member of
the Australian Institute of Training & Development (MAITD) and the Australian
Human Resources Institute (MAHRI).
