Tony Eldred

COMPANY FOUNDER

MELBOURNE, 2004 – Tony Eldred is the founder of Eldred Hospitality Pty Ltd, a company that provides high level personnel recruiting, training and management services for leading hospitality and tourism companies in Australia. Originally established in 1987 as Eldred Training & Development, the company name was revised in 2003 to accommodate a new division of the organisation — business broking services. After studying Law at Melbourne University, Eldred elected to use his business acumen and management tenacity to run his own enterprise devoted to the needs of the burgeoning Australian hospitality sector. For 17 years his company has provided valuable services for leading hospitality businesses and contributed to the ultimate profitability of many well known establishments in the region.

Eldred is a highly regarding expert in issues relating to hospitality management. He regularly contributes articles to publications such as Restaurant and Caterers magazine, What Cooking?; the Australian Institute of Management magazine, the AIM Journal; and Our Hotel, the Australian Hotels Association magazine.  Since 1987, his monthly page in FoodService News has been regarded as a resource for information on trends and management techniques in the hospitality sector. 

Eldred has 30 years experience in the hospitality industry. Immediately prior to founding his company, to subsidise his Law studies, he held the unique position of Training Manager (1983 – 1987) for the Hilton Hotel Corporation. During his four year tenure with Hilton his responsibilities as Training Manager included tailoring management and supervisory training programs to meet the specific needs of Hilton employees.

Prior to working with Hilton,  Eldred’s leadership and organizational skills lead the international confectionary and beverage giant, Cadbury Schweppes Ltd to appointed him as the Victorian Manager (1980 – 1983) for one of their key subsidiary companies, Associated Home Deliveries Pty Ltd. As the state manager Eldred was responsible for 500 employees, 220 trucks and two key distribution depots. Eldred’s challenge was to completely restructure the company, develop and implement a management control system, negotiate annual agreements and liaise with rigid industry unions such as the Transport Workers Union and the Storemen and Packers Union. He adeptly accomplished this goals by implementing productive organizational structures and applying effective management techniques.    

Eldred commenced his career in 1970 with the Kentucky Fried Chicken Australia Pty Ltd who, at that time, was forging new standards in Australia’s food industry. Eldred’s diligence and clear thinking lead the organization to fast track him to into a senior management position. During his 10 year tenure he held a variety of management titles including Area Training Manager and Area Sales/Operations Manager. Eldred also managed key vendor relationships and was the KFC representative to the Retail Traders’ Association.

Eldred attended Caulfield Grammar School. He holds professional accreditations with the Australian Institute of Hospitality Management (FAIHM) and the Australian Institute of Management (AFAIM). He is an active member of the Australian Institute of Training & Development (MAITD) and the Australian Human Resources Institute (MAHRI).

Eldred lives in Melbourne with his two daughters. He enjoys Aussie wines, lengthy weekend lunches and the great outdoors.
